Black Friday Icy Pops

Like it sweet, creamy & tangy?! Brave the brain-freeze & the Black Friday madness with these vibrant popsies!

Ingredients:

Pink Layer
The Darkest layer:

  • 2 cups Coconut Vanilla Yoghurt

  • 2 tbsp of maple syrup
  • 1 cup of orange juice
  • Juice from 1 lime
  • 3 tbsp of Rawnice Pink Pitaya Powder for the darkest shade of pink (reduce to 1 tbsp for middle layer and ½ tsp for light pink).
  • If consistency is too thick add a dash of coconut milk or more orange juice.

Yellow Layer

  • 11/2 cups Coconut Vanilla Yoghurt

  • 2 tbsp of maple syrup

  • 1/2 cup of orange juice

  • 2 large mangoes (3 if smaller)

  • 1 tsp of Rawnice Curcumin Powder for a darker shade (1/2 tsp for middle and ¼ of a tsp for lightest shade)

  • Lime juice

Directions:

For the Pink Layer:

  1. Place all the ingredients except pink pitaya powder in the blender and blend until smooth consistency. Separate mixture into three, adding the required amounts of pink pitaya powder for each layer of colour.
  2. Blend until colour is uniform.
  3. Fill popsicle holders starting with darkest layer.
  4. Place popsicles in the freezer for minimum 30 min before filling each new layer to get a defined layer.
  5. Once you have filled the holder with three layers place it the freezer overnight, until frozen.

For the Yellow Layer:

  1. Place mango flesh and orange juice and blend until you have puree
  2. Divide mango puree into 3 portion- 1 cup; 3/4 cup; ¼ cup. Blend.
  3. Darkest Yellow Layer: blend 1 cup of mango with ½ cup coconut vanilla yoghurt, 1 tsp of Rawnice Curcumin Powder, 1 tsp maple syrup and 1 tsp of lime juice.
  4. Middle layer: blend 3/4 cup of mango with 1 cup coconut vanilla yoghurt, 1/2 tsp of Rawnice Curcumin Powder, 1 tsp maple syrup and 1 tsp of lime juice.
  5. Lightest layer: blend 1/4 cup of mango with ½ cup vanilla yoghurt, 1/4 tsp of Rawnice Curcumin Powder, 1 tsp maple syrup and 1 tsp of lime juice.
